This cake although a very popular cake in Portugal, has an interesting history. It's main ingredients the "Bolacha Maria", or maria cookies or crackers as they are sometimes called originated England. In 1875, the Grand Duchess María of Russia married the Duke of Edinburgh in a festive wedding, which caught Europe’s fancy. To celebrate the occasion, a small English bakery in England created a sweet new cookie with Maria stamped on the top. Its popularity spread throughout Europe. Especially in Spain and Portugal.
There are many variations of recipes, I like this one made with a lemon-butter cream frosting, coffee and almonds for it's simplicity
For a small cake start with: 2 packages of Maria Cookies (aprox 7 oz each) 2 cups of confectioners or powdered sugar 1-1/2 stick unsalted butter 2 eggs 1 cup strong coffee 1 lemon zest crushed or slivered almonds
add the sugar into a bowl with the eggs & the melted butter, mix with a blender until you get a very creamy consistency. add the lemon zest and 3 tablespoons of strong coffee.
The cookies are dipped in the coffee.
