Bacalhau, cheese & Mushroom omelet

I thought I'd try another Portuguese omelet, with bacalhau (salt cod) with some Portuguese cheese & mushrooms. dice up a little bachalhau (pick some without any bones), a couple mushrooms, and a little cheese of your choice and a couple eggs. I'm having it in a croissant this morning. saute' the mushrooms & the bacalhau in a drizzle of olive oil, (just a couple of minutes) remove them from the skillet & add the eggs into the skillet. The skillet needs to be hot, swirl the eggs around the pan to make a thin layer of egg around the whole pan. add the cheese, the mushrooms & bacalhau and gently fold the ends over the mixture. serve with or without the croissant, makes an egg-cellent breakfast sandwich..

Bacalhau a’ Lucia

my family and I are very blessed to be able to spend some great quality time with our parents & particularly enjoy sharing & learning recipes from our mom. On this day she decided to get a little creative in making a meal with the old stand-by and always a favorite bacalhau (salt cod). They say there are over 365 Portuguese recipes for bacalhau, now we have 366. THE BASICS, SALT COD, "BACALHAU", soak in waer over-night changing water a few times to draw out the salt & rehydrate the fish. Boil the bacalhau for 15-20 minutes. POTATOES, peel & boil 2-3 potatoes & make simple mashed potatoes. The "Tomatada" 1 onion, peeled & sliced into circles 2 ripe tomatoes, chopped garlic, (to taste) salt (to taste) In a skillet, caramelize the onions with some olive oil and garlic, add the chopped tomatoes & stew for about 10 minutes. The Vegetable, In the mean time steam up some brocoli or other vegetable of choice, adding some sliced chourico adds to the flavor. To present, place the mashed potatoes in a nice traditional clay pot making a crater in the middle and fill with the "tomatada" place the now cooked bacalhau around the parimiter add broccoli to the serving dish, along with some lemon wedges & olives. Roupa Velha on Christmas Day

On Christmas Day or the day after, everyone is busy from the previous days festivities & usually there are plenty of leftovers. It is traditional to serve the previous days bacalhau meal but transformed into a new meal called "Roupa Velha", which means "Old Clothes" The bacalhau is boned & broken into smaller pieces, the potatoes are quartered & the cabbage cut into strips. The ingredients are mixed together & warmed on the stove top. New onions are sliced & caramelized in olive oil & spread over the mixture. The result is a "new" delicious dish made from leftovers Roupa Velha is a Christmas tradition in Portugal with bacalhau, in Brazil It would be made with the meat & vegetables from Cozido. a boiled dinner.
